Crunchy Mango and Chicken Salad

Well it has been a long time since my last post (6 months!) and that is because I am pregnant! Which means that I have either been feeling sick or too tired to cook. My lovely husband put up with me eating only boiled potatoes and oranges for weeks and when I started eating real food again, he has been doing practically all of the cooking. But now that I have finished up at work and am no longer wasting my energy with that I have enough energy to do some cooking again. I have a few recipes I have been saving up to blog and so today we will start with the super tasty Crunchy Mango and Chicken Salad.
The salad goes well with wine (even the non-alcoholic variety). Don't mind my lopsided candle  in the background - it melted in the sun.

This recipe is quick, easy and delicious. It is perfect for some alfresco dining in the summer months and makes use of the lovely in season mangoes! It is filling enough as a dinner on its own but would also be good as a side at a bbq. Here is my recipe:

SALAD INGREDIENTS ~

  • 1/4 savoy cabbage, shredded
  • 2 spring onions, thinly sliced (including the green part)
  • 100g packet of fried crunchy noodles
  • 1/2 bbq chicken, shredded
  • 1/2 green capsicum, sliced
  • handful slivered almonds
  • 2-3 radishes, thinly sliced
  • 1 mango, sliced

TO MAKE:

  1. Combine all ingredients in a large bowl
  2. Dress with dressing (see below)

DRESSING INGREDIENTS ~

  • 1tbsp sesame oil
  • 1tbsp soy sauce
  • 1tbsp white vinegar
  • pinch brown sugar
  • 3tbsp olive oil
  • 4tbsp water
  • 1 clove garlic, crushed
  • 2tsp honey

TO MAKE

  • Combine all ingredients in a jar and shake
  • Left overs will keep in the fridge for 1 week
