Weber Scones

Scones can be difficult to bake. You can end up with scones that are to hard, too chewy, too dry or under cooked. There are millions of different recipes for scones out there but I can tell you that this one is absolutely fool proof. You will end up with perfectly formed, fluffy and most importantly tasty scones every time! I go this recipe of Nath's mum and I have never used another recipe since. Here it is:

Ingredients ~

  • 300mL thickened cream
  • 3 cups self raising flour, sifted
  • 1/2 cup soda water

To Bake ~

  • Preheat the oven to 230 deg C. 
  • In a bowl combine the cream and flour with a wooden spoon. It will go crumbly.
  • Add the soda water slowly, mixing in between additions until the perfect consistency is reached. This is when the whole mix has just come together as a dough (anymore and it will be too sticky)
  • Lightly flour the bench and turn the dough out onto it. 
  • Flatten the dough out with your hands until it is about 2cm thick.
  • Use a scone cutter or appropriately sized drinking glass (lightly dusted with flour) and cut out scones.
  • Put onto a baking tray (don't greases or line the tray it will be fine without it) and stack them closely together like in the picture. This makes sure they don't dry out. 
  • Bake for 7 minutes then turn the tray around and bake for another 7 minutes. The scones should be a light golden colour. 
  • Serve with jam and cream and a nice cuppa earl grey tea :)
