Mince in Breadsticks

Hmmm well mince in breadsticks is not the best name in the world for a meal but it is the only one I have. This is something my mum made all the time when we were growing up and it was always referred to as "mince in breadsticks for dinner." This meal is super easy and super tasty. It is simply hollowed out breadsticks filled with a mince mixture of your choice with melted cheese on top. It is a great way to use up left over mince from things like chilli con carne, bolognese etc. What to do with the left over bread you might ask. Well you could use it to make breadcrumbs for another meal, use it to dip in dips, but I find that if you put it in a bowl and leave it out - people will eat it! Breadstick bread always tastes sooo nice! Anyway here is the recipe I used:

Ingredients ~
  • 1 french breadstick, cut in half lengthwise and most of the bread pulled out
  • 500g beef mince
  • 1 can corn (or two ears of corn)
  • vegetable oil
  • 1/4 onion diced
  • 4 cup mushrooms, diced
  • tomato sauce
  • tomato paste
  • bbq sauce
  • worcestershire sauce
  • cheese, grated

To Make ~
  • Preheat the oven to 200 degrees
  • Saute the onion in a little vegetable oil until soft and translucent.
  • Add the mince to the pan and brown lightly.
  • Then add the mushrooms and corn. Keep cooking until the mince is completely cooked.
  • Add a combination of sauces to your taste. Make it quite saucy but not runny.
  • Spoon the mince mixture into the hollowed out breadsticks.
  • Top the mince mixture with grated cheese (however much cheese you like)
  • Put in the oven for about 10mins or until the cheese has melted and started to brown.
  • Serve :)
  • This makes enough for two for dinner and two for lunch the next day. It reheats really well in the microwave - just don't burn the roof of your mouth on it like i did!
You could add sliced chilli on top of yours like Nath did. I like to top mine with tomato sauce.
