Quick and Easy Chicken Laksa

I did all this exercise this afternoon and so was craving something healthy for dinner so as not to undo my good work (not right away anyway). And since I was tired I was also looking for something that was not going to take very long to make, and so I decided on laksa. Actually... come to think of it I don't think that laksa is really the healthiest meal out... I am pretty sure that coconut milk is extremely fatty... Oh well it tastes awesome and there is tofu in it so it has to be healthy! Never mind that I fried the tofu first... So here is my recipe:

Ingredients ~

  • 2tbsp laksa paste 
  • 400ml tin coconut milk
  • 1 1/2 tsp fish sauce
  • 2 1/2 cups water
  • 1 vegetable stock cube
  • 1/2 bunch broccolini cut into 2cm lengths (note this was meant to snow peas but I forgot to buy them)
  • 1 tsp kaffir lime leaves (the ones that come in a jar)
  • 1 block of tofu, cubed
  • canola oil
  • 1/4 bbq chicken, shredded (or if you are Nathan cut into cubes so it looks like the tofu)
  • vermicelli noodles
  • bean sprouts
  • mint
  • coriander
  • chilli

To Cook ~

  • Fry the tofu in some canola oil over high heat. At the same time fry the laksa paste on its own in a saucepan for 3 mins over high heat. 
  • Add the coconut milk, water, stock cube and fish sauce to the laksa paste. Simmer for 5 mins
  • Add the broccolini and kaffir lime leaves to the laksa mixture and simmer for another 3 mins
  • Take the tofu off the heat and then add to the laksa mixture. Add the chicken as well and cook for another 2 mins. At the same time cook the vermicelli noodles according to the packet instructions. 
  • To serve place some bean sprout in the bottom of a bowl. Sprinkle some coriander and mint on top. Then add the noodles and ladle some soup over it all to fill the bowl. Sprinkle the soup with some more coriander and some sliced chilli
  • Serve and Enjoy
