Last weekend there were these Christmas markets on in Canberra that were trying to be like the famous European Christmas markets. They were an epic fail, however I did manage to buy some awesome beetroot pasta. I must admit that my main motivation for buying the pasta was that it was purple. And then I got home and thought "What on earth do I cook with beetroot pasta?" I did some googling to no avail, though I did find out how to make beetroot pasta (substitute beetroot puree for the egg and make as normal). So I cam up with this recipe and hoped for the best. And the best I got - it is delicious if I do say so myself (Nathan did agree with me and he is definitely not biased or anything...). So here is my recipe:
Ingredients ~
- beetroot pasta
- half spanish onion, diced
- 1 clove garlic, crushed
- half punnet cherry tomatoes
- small bunch of broccolini, sliced into 3cm lengths
- half a bunch of sage, chopped coarsely
- olive oil
- sea salt
- cracked pepper
- balsamic vinegar
- butter
- 100g feta
To Cook ~
- First of all heat some olive oil in a pan and then add the onion and garlic. Saute until soft and translucent. Add the sage and cook for another minute. Remove from the heat and set aside onion mix in a bowl.
- Next add some butter to the same pan and put the cherry tomatoes in there on low-medium heat. Leave them while following the rest of the instructions giving them a toss every now and then.
- Put the broccolini in a steamer and cook until they have changed colour to a brighter green. Set aside in the same bowl as the onion mix.
- Put the pasta on and cook for however long it requires - fresh pasta takes around 3-4mins on the boil.
- Just before the pasta is ready add the onion mix and broccolini to the cherry tomatoes. Toss all together to combine and heat through.
- When the pasta is ready drain all but a little bit of the water. Add the cherry tomatoes etc to the pasta. Sprinkle with salt and pepper to taste, add a good slosh of balsamic vinegar and toss to combine.
- Dish up and crumble feta over the pasta. Serve :)
