Bailey's Chocolate Mousse Cake

Christmas is upon us and that means lots of parties and celebratory food - which is always a good thing! If it is your job to provide dessert at any gathering this is the perfect recipe. It is the most delicious mousse cake I have ever eaten. It is fast, easy and tastes absolutely amazing. I sadly didn't take a photo of this beautiful cake but decided to post anyway since I got a few requests for the recipe. I will add a pic next time I make it. I am not really sure where I got the recipe from, but I can not take credit for it. Here it is:

Ingredients ~

  • 165g maltesers; crushed
  • 250g mascarpone cheese
  • 300ml thickened cream; whipped
  • 2 x 220 g packets whit choc and macadamia cookies
  • 2/3 cup Bailey’s
  • 300g dark chocolate, roughly chopped
  • 2 eggs, at room temperature
  • ¼  cup caster sugar

To Make ~
  •  Melt chocolate and stir until smooth, allow to cool slightly
  • Whip all of the cream set aside 2/3 for the mousse and 1/3 for the mascarpone mixture. 
For the Mousse~
  •  Beat eggs and sugar together on high speed for 5 mins or until pale and thick. Stir into cooled chocolate.  
  • Fold into the whipped cream cream and refrigerate 30mins
For the Mascarpone~
  •    Set aside ¼ cup maltesers. Fold together mascarpone, the 3/4 cup whipped cream and remaining maltesers.
  • Refrigerate for 30mins
To assemble~
  • Place side of spring form tin on a serving plate to use as a mould.
  • Dip biscuits into Bailey’s. Allow excess liquid to drain and place in a single layer in mould to cover the base. Spread with half the mascarpone mixture. Cover with another layer of liqueur dipped biscuits.
  • Spoon mousse over biscuits to cover. Add another layer of liqueur dipped biscuits. Cover with remaining mascarpone mixture and sprinkle with reserved maltesers.
  • Refrigerate 6 hours or over night.
  • Serve and Enjoy!
