Ice-cream success! On my second attempt at making ice-cream I ended up with a perfectly creamy and delicious ice-cream. The second was making sure the custard was really cld before adding it to the ice-cream maker (thanks for the tip Rach). I made a mixed berry ice-cream which is fantstic. But if you don't like berry seeds in your ice-cream I recommend you sieve your berry mix or make it with a different type of fruit. I like it to have some texture though. Tomorrow night I think I am going to try eating it with some shaved chocolate on top as well...mmmm yum! Here is my recipe:
Ingredients ~
- 5 egg yolks
- 1 cup milk
- 1 cup thickened cream
- 125g caster sugar
- 250g frozen mixed berries
To Make ~
- Put the milk and the cream in a saucepan and heat up until it is just about to boil. This should take about 10 mins.
- In the mean time whisk the egg yolks and sugar together until light and creamy (light in colour and creamy in texture that is). This should take about 5mins with a hand whisk and some muscle power :)
- Whisk the egg mix into the milk mix and heat over medium heat to make a custard. Stir frequently, the mixture is meant to simmer. And keep cooking until the mixture has thickened and coats the back of a wooden spoon. Don't worry if it is a bit lumpy because you will churn it in the ice-cream maker anyway.
- Let the custard cool. Whilst it is cooling get the berries and blitz them in a food processor blender until you have a puree. Then stir the berries into the custard.
- Chill the custard in the fridge for a couple of hours (or in the freezer if you are impatient like me).
- Then put in an ice-cream maker and churn the way the instructions tell you to!
