Who doesn't love a goo potato bake? It is just the most comforting food and if you are feeling particularly lazy it can be a meal all on its own. The other night Nath and I made a giant potato bake for the two of us, mainly to use up some herbs we had in the fridge. It was an delish accompaniment to dinner and a lovely effort free lunch the next day. Of course there are many ways to make a potato bake but here is what we did on this particular occasion:
- 6 desiree potatoes, washed and sliced thinly (leave the skin on - it is tasty!)
- 1 carton of sour cream
- 1/2 a bunch of basil
- 1/2 bunch tarragon
- 1 - 1 1/2 cups grated tasty cheese
- 1/4 - 1/2 cup grated parmesan
- cracked black pepper
- sea salt
To Bake ~
- Preheat oven to 180 degrees
- Layer the potato in a lasagne dish
- Pour the whole carton of sour cream over the top and smooth out evenly
- Roughly chop the herbs and sprinkle evenly over the sour cream
- Top with the tasty cheese and then parmesan cheese
- Add pepper and salt to taste
- Bake for around 40mins or until cheese is golden and potato is cooked through
- Yum!!! I 'm hungry again just writing this!
