Scrummy Potato Bake

Who doesn't love a goo potato bake? It is just the most comforting food and if you are feeling particularly lazy it can be a meal all on its own. The other night Nath and I made a giant potato bake for the two of us, mainly to use up some herbs we had in the fridge. It was an delish accompaniment to dinner and a lovely effort free lunch the next day. Of course there are many ways to make a potato bake but here is what we did on this particular occasion:

Ingredients ~

  • 6 desiree potatoes, washed and sliced thinly (leave the skin on - it is tasty!)
  • 1 carton of sour cream
  • 1/2 a bunch of basil
  • 1/2 bunch tarragon
  • 1 - 1 1/2 cups grated tasty cheese
  • 1/4 - 1/2 cup grated parmesan
  • cracked black pepper
  • sea salt

To Bake ~

  • Preheat oven to 180 degrees
  • Layer the potato in a lasagne dish 
  • Pour the whole carton of sour cream over the top and smooth out evenly
  • Roughly chop the herbs and sprinkle evenly over the sour cream
  • Top with the tasty cheese and then parmesan cheese
  • Add pepper and salt to taste
  • Bake for around 40mins or until cheese is golden and potato is cooked through
  • Yum!!! I 'm hungry again just writing this!
