Jaffa Cupcakes

I was on cake for work on Monday this week and decided to make some jaffa cupcakes. Basically these are chocolate cupcakes with orange flavoured icing on top - yum! I was going to go all gourmet and candy some orange slices and dip 1 end of the orange slice in chocolate and then put these on top of the cupcakes.... which would have been awesome. But I was tired on Sunday evening and after baking and icing the cupcakes I seriously couldn't be bothered. I do recommend making them like that though because it looks really professional and is super tasty. Anyway I used a recipe based on a women's weekly chocolate cupcake recipe (this is a never fail recipe!) and invented some icing:

Ingredients ~

  • 2 cups hot water
  • 3/4 cup cocoa powder, sifted
  • 250g butter, softened
  • 2 cups caster sugar
  • 1 1/2 tsp vanilla bean paste
  • 3 eggs
  • 1 1/2 cups plain flour, sifted
  • 1 cup self raising flour, sifted
  • 1/2 tsp bicarb soda, sifted

To Bake ~

  • Preheat the oven to 180 degrees
  • grease three 12-hole cupcake trays (real cupcake trays not muffin trays)
  • Put the butter, sugar and vanilla bean paste in a mixmaster on high to cream. In the meantime whisk the cocoa and hot water together in a big mixing bowl.
  • Scrape down the sides of the mixmaster bowl a few times and keep mixing until it is light and fluffy.  Then add the eggs one at a time, mixing well between each addition. 
  • Add the flour and bicarb to the cocoa mix and combine with a wooden spoon. 
  • Then add the butter mix and combine well. Note that this mixture will be really running - that is how it is meant to be so don't stress :) 
  • Pour the mix into the greased pans, fill each cupcake hole three quarters of the way up. This makes sure they are all the same size and that none overflows in the oven (from experience this is a huge pain to clean up - ask Nathan!)
  • Bake for 25mins and then cool for 5mins before turning out of the trays.
  • Allow to cool for a couple of hours before moving onto the icing.

Icing Ingredients ~

  • 3 tbsp of butter
  • 2 cups icing sugar
  • 2tbsp hot water
  • juice of one orange
  • orange food colouring

To Make Icing ~

  • Mix all the ingredients together in a small bowl
  • Then whip with a hand held mixer so it is light and fluffy. Add some more icing sugar if it is too runny or add some more water if it is too stiff. 
  • Ice your cupcakes :) 

I grated some dark chocolate over the top as a finishing touch.
