Lately I have been going so well cooking meals without actually having to go to the shops to buy anything. I was hunting around again for ingredients and found some chicken in the freezer that needed to be used. I also found some half empty packets of noodles in the cupboard and logically decided to make stir fry. My other aim was to make something that would clear my nose and help my hay fever - so I loaded this with chilli and ginger. A warning - if you don't like chilli very much this is not the recipe for you. For everyone else here is my recipe:
Ingredients ~
- 1 chicken breast, diced
- 2 tsp chilli paste
- 3 tsp lemon grass paste (you could use fresh but it is easier to marinate in the chicken in the paste)
- 2 tbsp honey
- 2 cm piece ginger, cut into thin slices (you can crush it if you don't want whole bits of ginger in your mouth)
- canola oil
- 1/4 cup water
- hokkien noodles
- rice stick noodles
- 1 small green capsicum, sliced
- 1 small zucchini, diced
- 3 medium mushrooms, sliced
- 1 stick celery, sliced
To Cook ~
- Put the chicken, lemon grass, chilli, honey, ginger and a splash of canola oil into a wok. Mix it all together and let it sit whilst you chop up all the vegies.
- Once the vegies are chopped start cooking the chicken mix over high heat. When the chicken is almost cooked through put all the vegies in and stir fry.
- Add the water to make it a bit more saucy.
- Cook the noodles, which is really just pouring boiling water over the top to soften them up.
- Add the cooked noodles to wok and toss to coat in the sauce.
- Serve and enjoy :)
