You know how they have those recipe cards as you enter the supermarket that say "Feed the family for under ten dollars!" And inevitably there is some disgusting looking recipe that has maybe three ingredients in it and you know it definitely would not feed a family of four. Well the other day I walked into Coles and there was one of those with this recipe on the front of it. It actually looked good so I decided to give it a try. It actually tastes really nice and is very quick and easy. I am guessing that it probably did cost under ten dollars, though it did only feed two people. But nonetheless here is the recipe - thanks to Curtis Stone and Coles :) (Ooh I should do promos for them). I have made a few tweaks though ;)
Ingredients ~
- 300g pasta of choice (I used penne)
- 3tbsp butter
- 1 head of broccoli
- 2 tbsp lemon juice
- 1/2 bunch basil leaves, torn (don't chop it makes them go black)
- 2 tbsp pine nuts
- grated parmesan to taste (I like lots)
- olive oil
To Cook ~
- Cook the pasta according to packet instructions.
- While the pasta is cooking put the butter in a pan over med-high heat. The butter will go brown after about 5mins, it will also bubble up and look like it is burning - don't worry. Just look for it to start turning brown.
- Once the butter is brown add the lemon juice, broccoli and pine nuts. Stir often so nothing sticks.
- When the pasta is al dente drain and then add the the broccoli mix and add the basil. Combine well and dish up into bowls.
- Drizzle the pasta with a little oil if you like (not much though as the butter makes it quite oily anyway).
- Add as much grated parmesan as you want and enjoy :)
I can vouch for those Tim Tams in the background as well - that was dessert! |
