Bottom of the Fridge Frittata

Yesterday afternoon when I got home from work I opened the fridge door determined to find enough ingredients to cook something without having to trek out to the shops. I found a few cherry tomatoes, some asparagus, remnants of cauliflower, a half eaten block of feta and some starting to wilt spring onions at the bottom of the fridge... and masses of eggs. So of course this all was just begging to be made into a frittata. Here is my recipe but you can basically incorporate any vegies you have lying around as long as you have plenty of eggs.

Ingredients ~

  • 4 eggs
  • 1/2 cup milk
  • 100g feta
  • cherry tomatoes
  • spring onions
  • cauliflower
  • asparagus
  • salt pepper
  • olive oil

To Cook ~

  • Chop all the vegies up nice and small (you could add bacon or chorizo as well) and fry in a little olive oil until they are almost cooked. You should use enough vegies so that they will form a single layer (with gaps) on the bottom of the pan you are using.
  • Whisk the eggs and milk together, crumble in the feta and season with salt and pepper. You could use whatever cheese you like. You should make enough to cover the whole pan and just cover the vegies. Keep the ingredients as the same proportions listed above and you can't go wrong.
  • Pour the egg misture over the vegies and fry for about 5mins, until egg has set on the bottom. You can tell as it smells like cooking eggs and the mix starts to wobble like jelly instead of looking like liquid.
  • Finish the frittata off by putting it under the grill for 5mins to make sure it is cooked all the way through.
  • Serve and enjoy :)
