Tropical Chicken Burgers

Nath and I were in a summery mood when we bought all the ingredients to make these, but then he ran too much at soccer and felt ill from the exertion and didn't want to eat.... but that is another story. The moral of which is that I made these burgers last night instead. Although it wasn't matched with the warm weather it was meant to be, daylight savings gave us the illusion of summer... So we sat on the lounge eating our tropical burgers, rugged up in our winter pyjamas, with the front door open and the breeze coming through. See, front door open - it means it must be summer soon!!! Regardless these burgers were delicious and super easy to make and so were the sweet potato chips that went with them. Here is my recipe:

Ingredients ~
  • 1 chicken breast
  • 1/2 cup bread crumbs
  • 1/2 a lemon
  • 1/2 a lime
  • 1 egg
  • 1 tbsp plain flour
  • dash of milk
  • oil
  • burger buns
  • mayonnaise
  • sweet chilli sauce
  • lettuce
  • tomato
  • cheese
  • pineapple
  • sweet potato
  • 2-3 tsp smoked paprika

To Cook ~
  • Slice the chicken breast in half lengthways and pound with a meat mallet until it is nice and thin (whatever thickness you want to eat). Cut the pieces to size to fit onto whatever buns you are using.
  • Put the zest of the lemon and lime in a bowl and combine with the breadcrumbs. In another bowl whisk together the egg, flour and milk.
  • Take each chicken piece and dip in the egg mixture, coating well. Then dip in the breadcrumb mixture, coating well. 
  • Heat up enough oil to coat the base of an electric frypan. Whilst waiting for this thinly slice your sweet potato.
  • Add the chicken to the frypan and as many of your sweet potato chips that can fit. Keep an eye on the sweet potato, turn once translucent cook for another minute and then remove from the pan. Repeat with rest of sweet potato slices.
  • The chicken should take about 5mins on each side to ensure it is cooked through and the crumb is crispy.
  • Whilst the chicken is cooking toast the buns under the grill and slice up all your toppings (lettuce, cheese, tomato, pineapple and anything else you might want to add).
  • When the chicken is done put on the base of the burger bun and top with all your ingredients.
  • Now you need to make your mayonnaise and season your chips. So put all the chips back in the frypans over very low heat and toss with the paprika and allow to heat through. Meanwhile in a small bowl put however much mayonnaise you are likely to use and add a squeeze of lemon juice, a squeeze of lime juice and a drizzle of sweet chilli sauce. Mix it all together and then taste to make sure you don't want more of any ingredients. 
  • Drizzle the mayonnaise over the chicken and your burgers are ready. Serve with the sweet potato chips (and perhaps a glass of red) and enjoy :)
