So yes I know that I seem to have an addiction to salads and this is pretty much true. Quick, simple, tasty and healthy. You can pack a lot of flavour into a salad. Of course salads don't have to be served as a main meal like I do, you could have this as an starter as a side salad as part of a bbq or as a lunch. But there is something particularly enticing about being able to cook/assemble a salad in 15mins and then say that dinner is ready. This recipe is probably based on several different Greek salad recipes that I have tried over the years and they have all just jumbled in my mind and developed into this super tasty dish. Here is my recipe:
Ingredients ~
- lamb steaks (3 was enough for two people for a main meal)
- 1-2 celery sticks
- 1-2 tomatoes
- 1/4-1/2 spanish onion
- 1/4 - 1/2 green capsicum
- 1-2 cucumbers
- lettuce of choice
- ~ 200g feta
- rosemary
- oregano
- ground pepper
- balsamic vinegar
- olive oil
- Italian herb mix
To Make ~
- Firstly, the quantities are rough and it depends how many people you are making it for and how you are serving it (main, side etc). But roughly use equal quantities of celery, tomato, capsicum, cucumber and a double quantity of feta. Dice all of these ingredients so they are roughly the same size and place in a salad bowl.
- Then for the onion and lettuce add a generous sprinkle to the ingredients that you already have. Slice the onion into fine rings and then cut the rings in half. Slice the lettuce quite finely.
- Moving onto the lamb - yum! Heat up a griddle pan over high heat. Whilst it is heating up rub oil and pepper into one side of the steaks. Put the meat on the griddle pan oil side down (it should be hot enough that it sizzles as soon as you put the meat down). Whilst this side is cooking very finely slice some rosemary and oregano (or any other herbs you have in the garden) and rub into the other side of the lamb. When cooked to your liking flip over and cook the other side.
- When the lamb is done allow it to rest for 5-10mins. Then cut each steaks into several slices and add to the salad.
- Drizzle the whole salad with olive oil and balsamic vinegar. Add a sprinkle of Italian herbs and toss to combine. Serve :) Again this went really well with a glass of red.
