Last night I had all of half an hour to cook dinner and eat in between getting home from work and going out to watch the netball (Australia versus England if you are interested - England lost miserably). So my lovely husband Nathan made this meal for me. I love stir fry - tasty, quick, healthy and it means you get to eat noodles! Here is Nathan's recipe:
- 400g beef steak, sliced into thin strips
- 3 mushrooms, chopped coarsely
- 1 carrot, coarsely diced
- 1 zucchini, coarsely diced
- 1 celery stick, diced
- 1 bunch pak choy, chopped coarsely
- 1/2 brown onion, finely diced
- 1 garlic clove, crushed
- 1 tbsp honey
- couple splashes of soy sauce (add as you are cooking)
- dash of sweet chilli sauce
- vegetable oil (for frying)
- 2 serves hokkien noodles (yum!)
To Cook ~
- Put a wok over high heat and add some oil. Let the oil get sizzling hot before adding any ingredients.
- You should add the ingredients in order from longest time to shortest time to cook. So first add the beef, onion and garlic and stir fry for about a minute. Add the honey and a splash of soy.
- Now add the carrots and the zucchini and stir fry for another 1-2 mins.
- Add another splash of soy and then the celery and mushrooms and stir fry for another minute.
- Finally add the pak choy and just allow to wilt. Stir in the sweet chilli sauce and your stir fry is done!
- Add boiling water to the hokkien noodles, drain and then stir through the stir fry in the wok. This keeps the noodles hot and makes sure they are coated well in the sauce.
- Serve and enjoy :)
