Summer Pasta Salad

I have no idea where this recipe came from. I am guessing that I have just made it up over time and I assume it was based on something at some stage. I make this salad so often now that I know the recipe by heart and really just keep adding stuff until it tastes perfect. It should taste creamy with a hint of curry and there should be enough ingredients so that no spoonful only has pasta in it. It is fantastic as a side, a whole meal, for bbqs and for lunch the next day. This recipe makes a huge amount of pasta - enough for probably 8 people maybe more as a side dish. Enjoy.

Ingredients~
  • 200g spiral pasta, cooked
  • 1 celery stick, sliced
  • 1/2 small brown onion, diced
  • 1 large carrot, grated
  • 1 red apple, diced
  • 2 handfuls of sultanas
  • 2 handfuls of cashews, coarsely chopped
  • 3/4 cup tasty cheese, cubed
  • 1/2 to 3/4 tin pineapple pieces (depending on how pineappley I am feeling)
  • mayonnaise
  • curry powder (Keens)

To assemble~
  • Combine all the ingredients except the mayonnaise and the curry powder into a large serving bowl. 
  • Slowly add the mayonnaise and the curry powder to taste. Go slow so you don't over do it. I find it tastes best when all the ingredients have a nice glisten of mayonnaise and the pasta has a slight orange tinge from the curry powder.
