This is a Weber family recipe passed on from Nathan's parents to him and I have to say that it is the best potato salad that I have ever tasted. We had this for dinner last night and for lunch today and it tasted even better today because all the flavours had really soaked into the potato. This is a good accompaniment to steaks, a good dish to bring along to a bbq or just delicious by itself if you couldn't be bothered making a full on meal like me :) Here is the recipe:
Ingredients ~
- 5 potatoes, washed and cubed (you can peel if you like but it gives a nice texture if you leave the peel on)
- 3 eggs, hard boiled and diced
- 2 - 3 gerkins, chopped finely
- 1/4 red onion chopped finely
- a handful of chives, chopped finely
- 1tsp French mustard
- 1tsp Australian mustard
- 1/4 cup natural yoghurt or sour cream (whatever you have in the fridge)
- 1/2 (or more) of mayonnaise
To Cook ~
- Steam the potatoes until done and then drain
- Combine the eggs, potatoes, onion, gerkins and chives in a large salad bowl.
- In a separate small bowl mix together the mustards and yoghurt. Taste and adjust to your liking.
- Add the mayonnaise and mustard mix to the potatoes and combine (do this gently so you don't end up with potato mash).
- Add more mayonnaise if all the ingredients are not coated enough.
- Serve whilst still warm. Or store overnight in the fridge and let the flavours develop and serve as a cold salad. Yum!
