Our friend Katie made this salad for Nath and I one night many years ago when we all lived in college together. Ever since that night we have made this salad regularly. It is one of those that is quick and easy, can pass as an entire meal and - my favourite - can go on a wrap for lunch the next day. The most interesting thing about this salad though is that it has soy sauce and balsamic vinegar in it. Not two flavours you would pick as going together well, but it is very delicious. Here is the recipe for you to try:
Ingredients ~
- steak (of your choice)
- feta, cubed
- salad mix (lettuce, rocket, baby spinach)
- mushrooms, sliced
- 1/4 red onion cut in rings
- cucumber, cubed
- tomato, cut in wedges
- soy sauce
- balsamic vinegar
- olive oil
To Cook ~
- Cut the steak into strips and cook in fry pan over high heat with the mushrooms. Use the soy sauce instead of oil to cook the meat and mushies - this makes the flavour go all the way through and it makes the meat very tender.
- Combine all the other salad ingredients together.
- Add the meat and mushies when cooked.
- Drizzle with balsamic vinegar and oil. Enjoy :)
