A lovely bunch of my friends pitched in and bought me an ice cream maker for my birthday a couple of months ago. I hadn't used it yet as it is a bit cold in Canberra for ice-cream in winter. But today I was going to a breakfast of waffles and sour cherries with another group of friends and thought "what goes better with waffles than ice-cream?" So when I got home at midnight last night I attempted a recipe called "quick mix vanilla ice cream" that came with the machine. I don't know whether it was the late hour, the recipe or my general incompetence but I would have to say "fail!" It just didn't freeze very well at all. Don't get me wrong it tastes absolutely delicious, it tastes like ice cream... but it looks more like soft serve than normal ice cream. So it was not particularly appropriate for a 40min drive to breakfast... I am fairly sure it would have ended up as pure liquid by the time we got there. So my advice is that this recipe was just not very good at all. I think any recipe that suggests that you can make ice cream without first making a custard is lying to you - it will not make proper ice cream! But if you want the taste with little to no effort or you just want to know what recipe to avoid here it is:
- 4 egg yolks
- 125g caster sugar
- 200ml cream
- 200ml milk
Beat the egg yolks and sugar until light and creamy. Add the milk and cream and beat until well combined (This takes all of 5mins in total when you use a mix master). Then pop in the ice cream maker and follow the instructions.
Stayed tuned for my next attempt - I am thinking chocolate hazelnut - yum!
And this is the end result - melty but tasty. You can see the vanilla beans as well (yes I added a tsp of vanilla bean paste to the recipe because I thought it sounded just a bit too boring) |
