Weber Special Fried Rice

Nathan and I invented this last night and so cleverly called it Weber Special Fried Rice - kinda sounds a little odd having a German name associated with a Chinese dish... oh well... it tastes awesome and that is what matters. I know traditionally fried rice is all about the ingredients being chopped all tiny and perfectly the same shape, but I like my fried rice chunky. This may have something to do with the fact that it takes far less time and skill to chop into larger pieces, but I am going to go with it tastes better my way. This is a great meal to make if you have left over rice from a dish (like we did) and most of the ingredients you would have in the fridge already. Here is our recipe:

Ingredients ~
  • 1 1/2 cups rice, cooked, drained and cooled (if like me you are impatient you can put the rice in the freezer to make it cool down quicker)
  • 1 carrot, chopped into rough cubes
  • 1/2 cup frozen peas
  • 3 slices of ham, diced
  • 1 egg
  • 6 baby corn, halved lengthways and then chopped coarsely
  • 1/4 tin pineapple
  • 3 spring onions, chopped (including about half of the green part)
  • canola oil
  • hoisin sauce
  • fish sauce
  • soy sauce

To Cook ~
  • Make sure the rice is cold and dry, it fries infinitely better this way.
  • Coat a big fry pan in canola oil and let it heat up to almost spitting and then chuck all the rice in. Fry for about a minute and then add enough soy sauce to make the rice change colour slightly (add about 2 tbsp at a time, you don't want to over do it)
  • Then add the carrot and the corn, about 2tsp of fish sauce and about the same of hoisin sauce. Fry for another 2-3mins and then taste. Add any more of the sauces so it tastes how you want it to.
  • Add the peas and fry until they have defrosted.
  • Crack the egg into the pan and stir through with a wooden spoon, this will give you little bits of cooked egg throughout your fried rice. 
  • Add the spring onions and the pineapple and then fry for about another 5mins. 
  • Now you are ready to eat :) It is good to serve with some soy sauce and hoisin sauce on the side so people can stir some more through if they like before they eat. 


A perfect Friday night meal, I think it is going to be just as good for lunch today as well!
