Sweet potato salad recipe as promised. This only takes as long as the sweet potato takes to cook, about 20mins. It is super tasty, can be eaten as a light meal by itself, goes well with steak and left overs taste delicious as a wrap made with lebanese bread. Yum, yum, yum.
Here's how to make it:Ingredients ~
- 1 large sweet potato, chopped into 1cm ish cubes
- 1/2 spanish onion, sliced in rings
- 1 block of feta, cubed
- semi dried tomatoes, halved (enough to be the same volume as the feta)
- greens of choice (we used rocket and lettuce from our vegie path - yum)
- balsamic vinegar
- olive oil
- Bake sweet potato in a 200 degree oven for about 20mins (or until cooked through and starting to go crispy)
- Put greens, feta, tomatoes, onion and sweet potato in a bowl. Drizzle with olive oil and balsamic to taste.
- Toss well to combine and serve. Easy as :)
