Sweet Potato Salad

Sweet potato salad recipe as promised. This only takes as long as the sweet potato takes to cook, about 20mins. It is super tasty, can be eaten as a light meal by itself, goes well with steak and left overs taste delicious as a wrap made with lebanese bread. Yum, yum, yum.
Here's how to make it:

Ingredients ~
  • 1 large sweet potato, chopped into 1cm ish cubes
  • 1/2 spanish onion, sliced in rings
  • 1 block of feta, cubed
  • semi dried tomatoes, halved (enough to be the same volume as the feta)
  • greens of choice (we used rocket and lettuce from our vegie path - yum)
  • balsamic vinegar
  • olive oil
To Make ~
  • Bake sweet potato in a 200 degree oven for about 20mins (or until cooked through and starting to go crispy)
  • Put greens, feta, tomatoes, onion and sweet potato in a bowl. Drizzle with olive oil and balsamic to taste.
  • Toss well to combine and serve. Easy as :)
