This was a favourite meal of mine when I was young, my mum used to make it, but not often enough. So when I moved out of home I used to make it every week (just like I used to eat ice cream and chocolate every night because I could get away with it). When I first met Nathan I was still eating ridiculous amounts of sweet curry and at first he thought it was an odd meal and was not keen to try it. But eventually he did and now he loves it. It is a definite easy dinner favourite. So the moral of the story is I know fruit and mince does not sound particularly appetising - but give it a chance, it tastes great!
Ingredients ~
- 450g beef mince
- 1 large apple, diced
- 3/4 tin of pineapple pieces
- curry powder
- rice to serve
- Brown the mince in a frypan over medium heat. Then add apple and pineapple and a splash of the pineapple juice as well.
- Add curry slowly, to taste. I think it tastes best when the apple has turned a nice yellowy curry colour. Keep cooking until the apple has gone nice of soft but still holding together well.
- Serve with rice and enjoy :)
