Today I was running a short workshop/meeting on stuff I have been working on to get feedback, advice, help etc. What better way to get people to attend than with the promise of food, sugary food! Last night I made this delicious slice which is loosely based on a Women's Weekly recipe and I think it went down really well. At the very least, Nathan and I think it is delicious! Here's the recipe so you can make it yourself:
Ingredients for Filling ~
- 90g butter
- 1/2 cup caster sugar
- 1 egg
- 1/4 cup self raising flour
- 2/3 cup plain flour
- 1 tbsp custard powder
- 1/3 cup plum jam
- 1/3 cup tinned strawberries (the ones in syrup), squashed
Ingredients for Topping ~
- 1 cup desiccated coconut
- 1 cup shredded coconut
- 2 eggs, lightly beaten
To Bake ~
- Preheat oven to 180 degrees.
- Grease and line a rectangular pan (about 25cm by 15cm) and make sure the paper hangs over the edges a bit so it is easy to lift out at the end.
- Beat butter, 1 egg and 1/2 cup caster sugar with a mix master until pale and creamy (just let it run for about 10mins on med-high speed).
- Meanwhile combine all the ingredients for the topping in a large bowl.
- When mixture is pale and creamy sift in flours and caster sugar and stir to combine - it will form a sticky dough.
- Press the dough into the pan - it is quite difficult it is easiest to use your hands. Also start from the corners and work to the centre as this helps stop the baking paper from sliding around.
- Then spread the jam over the dough and top with the squashed strawberries.
- Finally, spread over the topping and pop in the oven for 40mins. It should rise quite a bit and the coconut will turn a golden brown colour.
- Allow to cool in the pan. When completely cool lift out by the over hanging baking paper. The gently peel the paper away - this should work easily if you greased the pan well.
