Red Lentil Dahl (A Weber Recipe)

Tonight, whilst still feeling ill I was in desperate need of some actual food but really didn't have the energy to stand up and cook. Fortunately Nathan came to my rescue and cooked a lovely red lentil dahl, a family recipe which was delicious. The other bonus is that it is food that is spicy but not hot, so it has flavour but wasn't going to make me feel sicker. It is actually very easy to make (says she who has never actually made it) and here is the recipe:

Ingredients ~
  • 3/4 cup red lentils, rinsed (can soak for a couple of hours first if you don't like them too crunchy)
  • brown onion, diced
  • 1tsp crushed coriander seeds
  • 2tsp cumin seeds, crushed
  • 3tsp dried turmeric
  • pinch of salt
  • olive oil
  • 1 clove garlic, crushed
  • 2 potaotoes, cubed
  • 1tbsp peanut butter
  • 2tbsp tomato paste
  • 500mL vegetable stock (add more water as needed)
To Cook ~
  • Fry the onion, spices and garlic in oil in a saucepan over medium heat until fragrant. 
  • Add the lentils and fry for another 2-3mins.
  • Add the remaining ingredients and reduce heat to a low simmer. Taste and add more spices if necessary.
  • Cook, stirring frequently until potato is tender. Add more liquid if it reduces too quickly.
  • Serve with rice and dukkah if desired.
