I am sure I have said it before but an easy dinner is called for on a Sunday evening. Something that is tasty but doesn't take to long to cook. And this Sunday, preferably something that was going to satisfy Nathan's craving for Mexican... chicken tortillas! Super quick, super easy and super tasty!
Ingredients ~
1 chicken breast, cut into strips
tin of 4 bean mix
Mexican spice mix
sweet chilli sauce
natural yoghurt
avocado
1 garlic clove, crushed
1/2 lemon, juiced
lettuce, shredded
tomato, diced
cheese, grated
tortillas of choice
jalapenos (if you want)
Spicy Chicken ~
Coat chicken in spice mix and cook in oil until cooked through and crispy.
Smashed Beans ~
Put bean mix and about 1/2cm water in a saucepan. Add a good shake of spice mix and simmer away to infuse the flavours for about ten minutes. Then smash up coarsely with a fork. Mix through some yoghurt and sweet chilli sauce to taste.
Guacamole ~
Mash avocado flesh and stir in lemon juice and garlic. Add some sweet chilli sauce to taste.
Now everything is ready and you can make your tortillas anyway you like. If you put too much topping on and you can't roll your tortilla, you can always use another and make a tortilla sandwich like Nathan did. Happy Eating :)
