I wanted to cook something delicious for dinner last night but had no interest in leaving the house to buy any ingredients. So we scrounged around and came up with a chorizo, potato, rosemary, goats cheese and rocket pizza topping. And then I stumbled across a recipe for focaccia in a Marie Claire cookbook and that was that. Until the goats cheese turned out to be mouldy.... so replaced it with tasty cheese and everything was fine. It was so much fun making focaccia and the pizza tasted fantastic. Here is our recipe:

Preheat oven to 200 degrees

Preheat oven to 200 degrees
Ingredients:
- 3 1/2 cups plain flour
- 2 tsp dried yeast
- 1 tsp caster sugar
- salt
- 3 tbsp olive oil
- 250mL warm water
To Bake:
- put yeast, sugar and warm water in a bowl and set aside in a warm place for ten minutes or until it has started to froth.
- Add oil and yeast mixture to the flour and add a pinch of salt. Combine into a rough dough.
- Turn out onto a floured surface and need until smooth and elastic (this should take 10-15mins).
- Place dough in a lightly oiled bowl and set aside in a warm place to rise until it has doubled in size (in front of the heater works well).
- Put dough onto an oiled rectangular oven tray (around 25*34cm in size). Stretch out until it fills the tray (or most of) and then make dimples on the focaccia with your fingers. Sprinkle with salt and drizzle with oil.
- Let the dough sit on on the tray for another 20mins to rise some more then bake in the oven for 15mins.
- After 15mins remove from the oven and add the pizza toppings (if you just want focaccia then bake for 20mins in total and you're done). Then bake for another 10mins and voila, super yummy pizza.
Nathan was in charge of pizza toppings so over to him:
Toppings:
- 2 chorizo sausages cut into pieces
- 1 potato thinly sliced
- about 2 cups of grated cheese
- 1/4 of an onion cut into rings
- 4 tbs of tomato paste
- 1 sprig of rosemary leaves finely chopped (or dried equivalent)
- a small handful of rocket leaves
- fry the onion in a fry pan until brown and reserve
- fry each side of the potato slices until almost cooked through
- fry chorizo until cooked through
- through all the toppings on except the rocket in whatever order you like (we did tomato paste, rosemary, cheese, chorizo, potato, onion)
