Spanish Frittata and Salad

So a Friday night calls for a delicious but easy dinner and what better than a frittata? You can basically put anything in a frittata, it is a good way to use up random stuff in the fridge - an alternative to the random pasta dish! We went Spanish - chorizo - yum!

  • 2 chorizo, sliced 
  • 1/2 brown onion, coarsely chopped
  • 6 eggs
  • 1/3 cup milk
  • 1/4 cup torn basil leaves
  • olive oil, for frying
  • sweet potato, thinly sliced (about half a medium sized sweet potato)
  • potato, thinly sliced (maybe one medium sized potato)
  • Fry the onion and the chorizo until the onion is soft and the chorizo is brown. Put on some paper towel to soak up some of the oil
  • Steam the sweet potato and potato - should only take 10mins max
  • Whisk the eggs, milk and basil. When everything else is ready mix into the egg mixture and pour into a pan. Bake for 20mins until eggs mixture is just set.
Whip up a little salad to go with it. We used baby cos lettuce leaves, cherry tomatoes, spring onion and celery with some dressing.  

So we really should have got out a suitably sized pan to make the frittata but we used the electric fry pan (which is enormous) that was already out... meaning we ended up with more of a Spanish scrambled eggs than frittata - it may not look as pretty but still tastes amazing!
