Katie's pink velvet cake ~
Nathan is not only the dish pig but also head coffee maker in our house and the only person who knows how to make my coffee just right. Fortunately there was left over pink velvet cake which was the perfect accompaniment to my morning coffee. I don't know the recipe for the cake, perhaps Katie will post it for us (hint, hint, nudge, nudge Katie).... but as far as I can tell it is a normal red velvet cake, with pink colouring instead of red and the addition of rose water - which tastes amazing!!! Iced with cream cheese icing (I think my favourite flavour icing!) and strawberries on top this cake is absolutely delish - thanks Katie :)

thanks guys- i am glad you liked it - ( and the burnt bits were easy to cut off). So first confession;i don't measure as well as i believe the recipe calls for so i will write down the actually recipe and let people guesstimate themselves.

- 125g butter softened
- 1 teaspoon vanilla extract
- 1 and a half cups caster sugar
- 2 eggs
- 1 and half cups plain flower
- 2 tablespoons cornflour
- 2 tablespoons powder
- 1 cup buttermilk
- 1 tablespoon rose pink food colouring (i used red food colouring and then added a couple of capfuls of intimation rose water)
- 1 teaspoon white vinegar
- 1 teaspoon bicarbonate of soda
- 1 cup flaked coconut (i used strawberries that i had pre dusted and left with a little icing sugar)
cream cheese frosting (they called for mascarpone frosting but i didn't use this as my local shop doesn't have mascarpone)
- 250g cream cheese softened
- 1 cup icing sugar
- 1 teaspoon vanilla extract
Directions
- preheat oven to 160 - grease 2 cake tins
-beat butter, extract, sugar and eggs in a small bowl until and light and fluffy
- transfer to lge bowl and stir in sifted flours and cocoa and combined buttermilk and food colouring in 2 batches
- combine vinegar and soda in a cup allow to fiz then fold into cake mixture
- divide mixture between pans
- bake cake about 25 mins (or until just before burnt on the outside)
- stand cakes 10 mins before turning onto wire rack to cool. Enclose cakes in plastic wrap; freeze 40 mins
- meanwhile make frosting
- beat creamcheese, icing sugar and extract until smooth.
At this stage if you have made two cakes. Split the two cakes in half and layer them together with the cream cheese frosting (actually if you are doing this method it maybe worth making a bit more frosting)
If you don't have two cakes because you haven't had enough time; don't be disheartened just spread the cream cheese on top and decorate with strawberries.

Katie, we finished of the last pieces of your cake yesterday, so sad to see it all gone! I think Rikki might have to bake another cake for the blog this weekend...
