Feta Mint Pasta

Nathan was not feeling the best tonight so we needed a meal to make him feel better. This is the perfect meal for when you are not feeling the best. Why? Because it is made with lovely lemon, garlic and mint which clears the nose and soothes a sore throat. Plus it only takes as long as the pasta takes to cook - so you can be done in 15 minutes flat.  Here's the recipe:
  • 200g penne
  • about 15 snow peas, topped and tailed and cut in half
  • about 2 handfuls of frozen baby peas
  • juice of half a lemon
  • 1 clove garlic, crushed
  • couple of tbsp olive oil
  • handful of mint leaves, shredded
  • 100g feta, crushed

  • Put pasta into boiling water and cook according to instructions on packet
  • Meanwhile combine feta, oil, lemon juice and mint
  • Put peas and snow peas into saucepan with pasta 5 mins before it is ready
  • When pasta is cooked, drain and put back into pan
  • Put feta mix into pan with pasta and stir over low heat until well combined
  • Serve and enjoy :)
