I was on morning tea for work today and in my group that means that you must bring cake. So I went to bake my favourite fall back chocolate cake last night and realised that I didn't have enough key ingredients - including no caster sugar! So I adapted and came up with an absolutely delicious cake.

- 125g butter
- 1 tsp vanilla extract
- 1 1/4 cups brown sugar
- 2 eggs
- 1 1/3 cup self-raising flour
- 1/2 cup cocoa powder
- 2/3 cup water
- 110g mixed berries
Preheat oven to 180 degrees. Combine everything but the berries in a mixer until well mixed and pale chocolate in colour. Stir through the berries and put in pan of your choice (I advise not a broken spring form pan like I used - no matter how much you tell your self it'll be fine - it will leak!).
Cook for an 1hr 10mins. If you can resist the temptation to open the oven door and check it earlier it will rise perfectly and not crack.
When cooled sprinkle with sifted icing sugar - it really needs to be completely cooled to do this otherwise the icing sugar starts to dissolve and makes a weird cloudy mess.
If you want to serve it as a dessert I think it would be nice with a chocolate ganache icing and some cream and berries on the side.
