There is something very comforting and satisfying about having bacon and eggs for dinner. I don't know what it is, but it is definitely super tasty. Nathan was in charge of cooking dinner tonight and he made an absolutely delicious meal of bacon and eggs on toast with fried tomatoes and greens.
I think everyone knows how to cook bacon and everyone has their favourite way to cook eggs - Nathan and I are both partial to fried eggs with a soft but not runny centre. Fried tomatoes are a great way to make it more exciting. If you quarter a tomato it will only take 2-3mins in a frypan to go soft and the skin blister. Spinach also goes fantastically well with bacon and eggs. We used up the never ending green salad we made on Friday night by wilting it (two types of spinach in the salad) in the same pan the bacon was cooked in. Nath seasoned the tomatoes and spinach with some pepper and balsamic, balsamic and tomatoes are definitely a match made in heaven! And taa-daa dinner was ready, a beautiful one pan meal that took all of 15mins and tasted delicious.
