Vietnamese Honey Tea

Earlier in the year whilst we were in Vietnam (me, Nathan and my mum) we went on a Mekong River cruise and visited some beekeepers. It was here that I found out about this honey tea which our tour guide Nhan told us helps with about every ailment you can possibly imagine. Last night I was tired and grumpy, with a sore neck and sore ankle so I thought - lets see if this tea really works. And it did work, like a dream! I fell asleep so quickly (thus the morning blog) and had the best sleep - and no more sore neck. So here is the recipe for the magic tea to cure everything :) mint tea (hard to find in Australia, you can easily get mint flavoured green tea though) honey to taste cumquat juice to taste (hard to get, Nhan our tour guide told us lime juice is a good substitute) bee pollen (funny little grainy looking stuff - it dissolves in the hot water and you can get it from health food stores) boiling water - obviously :) brew the tea in a tea pot put aout tsp of honey in the botto

Weber Scones

Scones can be difficult to bake. You can end up with scones that are to hard, too chewy, too dry or under cooked. There are millions of different recipes for scones out there but I can tell you that this one is absolutely fool proof. You will end up with perfectly formed, fluffy and most importantly tasty scones every time! I go this recipe of Nath's mum and I have never used another recipe since. Here it is: Ingredients ~ 300mL thickened cream 3 cups self raising flour, sifted 1/2 cup soda water To Bake ~ Preheat the oven to 230 deg C. In a bowl combine the cream and flour with a wooden spoon. It will go crumbly. Add the soda water slowly, mixing in between additions until the perfect consistency is reached. This is when the whole mix has just come together as a dough (anymore and it will be too sticky) Lightly flour the bench and turn the dough out onto it. Flatten the dough out with your hands until it is about 2cm thick. Use a scone cutter or appropriately

Weber Special Fried Rice

Nathan and I invented this last night and so cleverly called it Weber Special Fried Rice - kinda sounds a little odd having a German name associated with a Chinese dish... oh well... it tastes awesome and that is what matters. I know traditionally fried rice is all about the ingredients being chopped all tiny and perfectly the same shape, but I like my fried rice chunky. This may have something to do with the fact that it takes far less time and skill to chop into larger pieces, but I am going to go with it tastes better my way. This is a great meal to make if you have left over rice from a dish (like we did) and most of the ingredients you would have in the fridge already. Here is our recipe: Ingredients ~ 1 1/2 cups rice, cooked, drained and cooled (if like me you are impatient you can put the rice in the freezer to make it cool down quicker) 1 carrot, chopped into rough cubes 1/2 cup frozen peas 3 slices of ham, diced 1 egg 6 baby corn, halved lengthways and then chopped
